Production Area: San Gimignano (SI);

Variety: 100% Frantoio;

Olive Groves: The olive groves are located in the San Gimignano area, near our farmhouses. The trees of this variety are marked, and once they reach maturity, the harvest begins.

Harvesting: The olives are strictly hand-picked using combs that cause the drupes to fall onto nets laid on the ground, preventing the olives from being damaged. Afterwards, the olives are placed in crates and transported to our mill to be processed within a maximum of 24 hours, in order to preserve their organoleptic properties as well as their unique taste and aroma.

Processing: Cold extraction means that the oil is produced through a mechanical process at a temperature below 23°C (73.4°F). The temperature is monitored throughout the entire extraction process using probes, ensuring it never exceeds 23°C. This processing method allows us to best preserve the unique characteristics and, above all, the quality of the product.

Color: Clear and dense, with green hues and golden yellow reflections.

Aroma and Taste: A very fruity and harmonious oil.
